Honey and lemon thyme roast chicken
Serves: 4
Prep time: 10 mins
Cooking time: 1 hr 40 mins
Total time: 1 hr 50 mins
Ingredients
1 large chicken, weighing approx. 1.8kg (4lb)
4 sprigs lemon thyme
4 tbsp honey
Finely grated zest and juice of 1 lemon
2 tbsp olive oil
Salt and freshly ground black pepper
Method
Preheat Oven 190°C / fan oven 170°C / Gas Mark 5.
Put the chicken into a large roasting tin and put 2 sprigs of lemon thyme into the cavity of the chicken.
Mix together the honey, lemon zest, lemon juice and olive oil. Strip the leaves from the remaining sprigs of thyme and add to the mixture. Season with salt and plenty of black pepper, then rub all over the chicken’s skin.
Roast for 20 minutes per 450g (1lb), plus 20 minutes in total. A 1.8kg (4lb) chicken will take 1 hour 40 minutes to cook. Baste the chicken 2-3 times with the cooking juices whilst it roasts and cover with foil as soon as it is golden brown.
P.S.
Add 1 tsp whole cumin seeds or ground cumin to the rub for a delicious Moroccan flavour.

檸檬皮(蓉)和1個檸檬的汁
2湯匙橄欖油
鹽和即磨黑胡椒
方法
烤箱預熱到190°的C /風烤箱170℃/煤氣烤箱馬克5。
雞放入一個大烤盤,並投入2檸檬百里香小枝入雞腔。
蜂蜜,檸檬皮,檸檬汁和橄欖油混合在一起。剝離剩餘的小枝百里香的葉子和添加的混合物。灑大量的黑胡椒與鹽雞皮上。
烤20分鐘,每450克(1磅),烤總在20分鐘。一個1.8公斤(4磅)雞將需要煮1小時40分鐘。於烤雞時用汁淋上兩三次等雞皮轉金黃色時,盡快用錫紙包好。

加入1茶匙原粒cumin seeds或擦上磨碎cumin seeds添加摩洛哥風味。 |
